BANANA NUT MUFFINS 
2 1/4 c. oat bran cereal
1 tbsp. baking powder
1/4 c. brown sugar
1/4 c. walnuts or pecans, chopped
1 1/4 c. skim milk
2 very ripe bananas
2 egg whites
2 tbsp. vegetable oil

Preheat oven to 425 degrees. Mix the dry ingredients in a large bowl. Mix the milk, bananas, egg whites, and oil in a bowl or blender. Add to the dry ingredients and mix. Line the muffin pan with paper baking cups and fill them with the batter. Bake for 17 minutes. Makes 12 muffins.

My husband has very high cholesterol, poor dear, so I am constantly trying to make him something that he can eat that is on his diet. Try them, they might surprise you as to how good they are.
