BANANA NUT MUFFINS 
2 1/4 c. oat bran
1 tbsp. baking powder
1/4 c. brown sugar
1/4 c. chopped walnuts or pecans
1 1/4 c. skim milk
2 very ripe bananas (the riper the better)
2 egg whites
2 tbsp. vegetable oil

Preheat oven to 425 degrees.

Mix dry ingredients in large bowl. Mix milk, bananas, egg whites and oil in a bowl or blender. Add to the dry ingredients and mix. Line muffin pan with paper baking cups and fill them with batter.

Bake about 17 minutes, or until toothpick comes out clean. Makes 12 muffins.
