EASY CORN RELISH 
1 (15 1/4 oz.) can whole kernel drained corn
1 (2 oz.) jar chopped pimento, drained
2 green onions, chopped fine
1 tbsp. oil
1/4 c. sugar
1/4 tsp. salt
1/4 tsp. celery
1/3 c. vinegar

In small bowl, combine corn, pimento, green onions and oil. Mix well. In small saucepan combine remaining ingredients. Bring to boil, reduce heat and simmer 2 minutes. Add to corn mixture. Cover and cool. Refrigerate several hours until thoroughly chilled. Drain and serve.
