HOT CHICKEN SALAD 
2 c. diced cooked chicken
1-2 stalks chopped celery
4 oz. sliced water chestnuts
1/2 tsp. salt
1 tbsp. minced onion
1/2 c. mayonnaise
2 c. crushed potato chips
1/2 c. grated cheese
1 tbsp. lemon juice

WHITE SAUCE:

2 tbsp. butter
2 tbsp. flour
1 c. chicken stock or milk

Make white sauce and add mayonnaise. Mix in all but chips and cheese. Pour into shallow casserole (8 x 10 inch). Top with chips and cheese. Bake at 350 degrees for 20 minutes. Serve immediately hot. May be made the day before all but chips and cheese. Keep in refrigerator covered with foil.
