PIROGHI CASSEROLE 
12 lasagna noodles
2 c. Cheddar cheese, shredded
1 onion, sauteed (optional)
2 lbs. potatoes
1 (10 1/4 oz.) can sauerkraut, drained

Cook lasagna noodles and set aside. Cook potatoes as you would mashed potatoes. Add shredded Cheddar cheese to potatoes; will be thick. In a well-buttered 8x12 inch pan, layer noodles, half of potato mixture, another noodle layer, entire can of sauerkraut, noodles again and remainder of potatoes, then a final layer of noodles. Top with sauteed onions, if desired. Cover with foil, bake in preheated 350 degree oven for 45 minutes.
