SWEET PEPPER RELISH 
Grind 12 green peppers
Grind 12 green hot peppers
Grind 12 apples
4 c. sugar
Grind 12 red bell peppers
Grind 12 red hot peppers
Grind 12 onions
4 c. vinegar
2 tbsp. salt

Scald peppers and onions. Let stand for 10 minutes, then drain. Add apples, sugar, vinegar and salt. Boil for 20+ minutes until it has reached the desired thickness. Put in hot jars and seal.

Hint: For onion juice without tears, sprinkle salt on surface of a cut onion then scrape onion with a spoon to extract juice.
