STUFFED BANANA PEPPERS 
1 sm. chopped tomato
1 sm. chopped onion
1 med. chopped bell pepper
2 c. grated Cheddar cheese
1 sm. jalapeno pepper, chopped
2 tbsp. sweet pepper relish
1/4 lb. bacon
1 doz. banana peppers, with seeds removed

Wash peppers. Make slice down on side and remove seeds. Mix all ingredients except banana pepper and bacon. Stuff peppers, wrap bacon slice around. Bake at 375 degrees until bacon is cooked.

Very good! I did not use the jalapeno pepper and they still packed some heat. I also used a blend of italian cheeses instead of the cheddar because that is what I had. I will definitely make them again.

Excellent and very easy. I used Hungarian wax peppers, spring onions, Grafton Cheddar cheese and a San Marzano tomato. Delicious. Make sure you place the peppers slit up in the baking pan so the stuffing doesn't leak out during cooking.

Think I will try this - using Hormel Bacon Bits instead of
bacon - and heating maybe - just until cheese is melted, this
way it would leave a little crunch......has to be yummy!!!!
