GEORGE'S FABULOUS CHILI 
1 lb. ground pork
2 1/2 lbs. beef chuck, cut into 1/2 inch pieces
2 tsp. salt
Olive oil as needed
1 lg. onion, chopped
1 green pepper, chopped
3 garlic cloves, chopped
2 c. beef broth
2 c. water
1 can tomato sauce
1 can stewed tomatoes
6 tbsp. chili powder
3 tbsp. cumin
2 tbsp. paprika
1 tbsp. sugar
1 can tomato paste
2 cans (16 oz.) kidney beans, drained, optional
2 cans (16 oz.) chili beans, drained, optional

Heat oil and blend onions, peppers, and garlic until translucent. Brown meat over high heat. Add remaining ingredients (add beans at this time if desired). Bring to a boil, reduce heat and simmer uncovered, stirring occasionally, 1 1/2 to 2 hours.
