COCONUT CREAM PIE 
1 lg. can evaporated milk, add fresh milk to 2 c.
3 egg yolks
3/4 c. sugar
2 tbsp. cornstarch

(Reserve 1/2 cup of the 2 cups milk to mix with 3 above ingredients).

As the rest of the milk comes to boil, pour egg mixture in. Beat with wire whip until it thickens. Add 1 teaspoon vanilla and 1/2 cup flaked coconut. Pour into baked pie shell. Use your regular meringue recipe. Sprinkle coconut over it and brown lightly.
