CHICKEN SOUP 
3 lbs. chicken
1 1/2 c. celery, diced
1 1/2 c. onion
3 carrots, diced
2 or 3 cloves garlic, left whole
1 tsp. parsley
Salt and pepper to taste

Cover chicken with water and bring to boil over medium heat, skim off foam that comes to the top until foam stops rising to top. Add all remaining ingredients and simmer over low heat about 1 hour until chicken is tender. Add rice or noodles and serve.
