HUMMINGBIRD CAKE 
3 c. flour
1 tsp. baking soda
2 c. chopped bananas
1 1/2 c. vegetable oil
8 oz. can crushed pineapple (including juice)
2 c. sugar
1 tsp. salt
1 c. chopped nuts
3 eggs

Grease and flour 10 inch tube or bundt pan. In large mixing bowl, sift flour, sugar, soda, salt, and cinnamon. Add remaining ingredients and stir until mixed (hand mix only). Pour into pan and bake 1 hour 10 minutes at 325 degrees. Cool on cake rack 25 to 30 minutes.

CREAM CHEESE ICING:

8 oz. pkg. cream cheese, softened
1 stick butter, softened
1 tsp. vanilla
1 box powdered sugar

Beat first 3 ingredients until fluffy. Add sugar and mix until smooth.
