HUMMINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 tsp. vanilla
1 1/4 c. vegetable oil
3 eggs, well beaten
8 oz. crushed pineapple, drained
2 c. bananas, smashed
1 c. pecans, chopped

Combine dry ingredients and sift into a large bowl. Add beaten eggs, oil and vanilla. Mix well. Add pecans, bananas and pineapple. Pour into 2 greased and floured 10 inch cake pans or 1 Bundt pan. Bake at 375 degrees for 1 hour and 10 minutes. Cool.

ICING:

3 oz. cream cheese, softened
1/2 stick butter, softened
1 box powdered sugar
1 tsp. vanilla
1/4 c. heavy cream

Mix well and spread over cooled cakes.
