ZUCCHINI CAKE | |
3 c. grated zucchini (remove only seeds, leave rind on) 1 c. drained crushed pineapple 2 3/4 c. sugar 1 c. chopped nuts 1 c. oil 4 eggs 4 c. flour 2 tsp. baking powder 1 tsp. baking soda 3 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. salt (optional) 2 tsp. vanilla Mix zucchini, sugar, oil and eggs. Add dry ingredients and mix well. Add nuts. Grease and flour Bundt or angel food pan. Bake at 300 degrees for 1 1/2 hours. Invert pan immediately and hang over bottle. 3 loaf pans can also be used. Bake at 350 degrees for about 50 minutes. Raisins can be added also. |
