PINEAPPLE UPSIDE DOWN CAKE 
1/4 c. butter
2/3 c. firmly packed dark brown sugar
1/2 c. milk
5 pineapple slices, drained, halved
9 maraschino cherries, drained
1 c. sugar
1/2 tsp. salt
1/2 c. shortening
2 eggs
1 tsp. vanilla
2 c. flour
1 1/2 tsp. baking powder

Melt butter in 9x13 pan. Add brown sugar and blend. Arrange pineapple and cherries. In separate mixing bowl add 1/2 cup shortening to hot milk. Beat eggs until thick and lemon color. Add sugar gradually; beat after each addition. Add vanilla, sifted dry ingredients, then add hot milk. Pour over pineapple/cherries.

Bake at 350 degrees for 30-35 minutes. Let stand 10 minutes and serve turned over with whipped cream.
