PINEAPPLE UPSIDE DOWN CAKE 
3 tbsp. butter
1 c. brown sugar
1 (16 oz.) can of sliced pineapple, drained
3 eggs
1 c. sugar
1 c. flour
1/3 c. pineapple juice
1/2 tsp. salt
1 tsp. baking powder
Maraschino cherries

In a large iron skillet melt butter and sugar. Beat egg whites until very stiff, set aside. Cream egg yolks, sugar and all pineapple juice. Sift flour, salt and baking powder. Add to creamed mixture. Fold in egg whites. Arrange pineapple slices over the mixture in the skillet. If you have some maraschino cherries put 1 into each pineapple slice. Pour batter over pineapple slices. Bake at 350 degrees for 40 minutes. Cool slightly and turn out on cake plate.
