MUM'S GINGER NUTS 
I remember these as a kid and continue to make mum's ginger nuts today. They are a real hit with the grand kids. Thanks mum!

1 cup sugar
1 cup (2 sticks) butter
1 cup golden syrup (Lyle's)
1 tsp. baking soda
1 tbsp. ground ginger
3 cups all-purpose flour

Melt sugar, butter and syrup in a saucepan over low heat. Add baking soda that has been dissolved in a little milk, mix well, then stir in flour.

Make small balls and flatten with a fork.

Bake at 350°F for 20 minutes or until golden.
