TURKEY GUMBO 
1 tbsp. vegetable oil
1 c. each coarsely chopped onion, celery and green pepper
2 tsp. extra spicy seasoning blend
2 tbsp. all - purpose flour
1 tbsp. no salt added tomato paste
2 1/2 c. homemade turkey stock or low sodium canned chicken broth
1 tbsp. lemon juice
2 c. diced leftover turkey (about 8 oz.)
1/4 c. raw rice

In medium sauce pan, heat oil. Add vegetables and seasoning, blend and saute, stirring, for 10 minutes. Stir in flour and tomato paste. Whisk in stock and lemon juice until smooth. Heat to a boil, whisking occasionally. Add turkey and rice. Cover and simmer for 30 minutes. Makes 4 servings.
