HARVEST CASSEROLE 
3 zucchini
2 lg. tomatoes
6 med. potatoes
2 med. onions
1 (8 oz.) pkg. grated cheddar cheese
Bread crumbs
1 can of grated Parmesan cheese
Vegetable oil
Parsley
Salt & pepper

After peeling and washing vegetables, slice them thinly. Coat bottom of large casserole dish with oil and in layers add the following, while seasoning with salt and pepper to taste: 2nd layer - zucchini 3rd layer - onions 4th layer - tomatoes 5th layer - grated cheddar & Parmesan cheese 6th layer - potatoes 7th layer - zucchini

Top with 1/2 cup oil, dash of parsley, remaining grated cheddar cheese and light cover of bread crumbs. Bake at 350 degrees until potatoes are done (approximately 1 hour).
