CHICKEN CORDON BLUE 
18 boned and skinned chicken breasts
Shaved ham (sliced)
Swiss cheese
Beaten eggs with water
Corn flake crumbs
Flour
Salt and pepper

TOPPING:

1/4 c. butter
1 c. chicken broth
1 c. milk
3/4 c. dry white wine
1/2 tsp. lemon juice
2 cans sliced mushrooms

Flatten chicken breast by pounding. Place 1 slice shaved ham and Swiss cheese on each. Roll - close with toothpick. Roll in flour, salt, pepper and beaten eggs with water, corn flake crumbs. Brown. Place in oven dish. Refrigerate if you want.

Topping: 1/4 cup butter (melt). Thicken with flour/salt. Add chicken broth, milk, wine, lemon juice and mushrooms. Pour over chicken. Bake at 350 degrees 45-60 minutes.

Have this ready to go for dinner tonight. The sauce is light and flavorful! I used homemade seasoned breadcrumbs to add a little more flavor to the chicken. Would definitely make this again.
