POT LUCK CASSEROLE 
1 lb. ground beef
1 qt. spaghetti sauce
2 tbsp. butter
2 med. carrots, sliced thinly
1 onion, sliced thinly
2 sm. zucchini, sliced thinly
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. basil
1 lb. pkg. ziti (or any pasta)
Grated Parmesan cheese
4 oz. Mozzarella cheese

In a skillet, brown beef in a little oil and season to taste. Remove and add to spaghetti sauce. Set aside.

In the same skillet add butter and the carrots. Cook 4 minutes. Add onions. Cook and stir 1 minute. Add zucchini, cook 1 minute. Cover and cook about 4 minutes until crisp and tender. Add the salt, pepper and basil. Stir lightly.

Cook pasta and drain well. Preheat oven to 350 degrees F.

Cover bottom of a 13x9x2 inch baking dish with a thin layer of sauce and ground beef. Add 1/3 of pasta, Parmesan cheese sprinkled generously and 1/2 of the vegetables. Repeat layers ending with pasta and sauce and Mozzarella cheese on top. Cover with aluminum foil and bake for 25 to 30 minutes until bubbly hot.
