POT LUCK CASSEROLE 
2 lb. ground beef
1/2 c. green onions, chopped
2 tbsp. green peppers, chopped
1/4 c. ripe olives, chopped
1 c. sour cream
16 oz. tomato sauce
8 oz. wide noodles
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
2 c. small curd cottage cheese

Cook noodles according to package directions. Drain. Melt butter. Brown meat in butter. I usually salt the meat before browning. Drain off drippings. (If you use lean ground meat, you probably will have no drippings). Stir in tomato sauce and flour. Simmer 10 minutes.

Place 1/2 of the noodles in buttered 3 quart casserole dish. Spread on all cottage cheese mix. Top with remaining noodles. Cover with meat mixture. Bake 30 minutes at 350 degrees. Let set 10 minutes before serving.

When cooking for 4 or 5 adults, use 2 smaller casserole dishes. You can either bake them or freeze them unbaked. Either way, they seem to taste the same. However, if you have baked one of them, you can then let it thaw outside the icebox while you go to church, then warm it up quickly.
