HOMINY CHEESE CASSEROLE 
3 tbsp. butter
3 tbsp. flour
1/4 c. minced onion
Dash of pepper
3/4 tsp. chili powder
2 (16 oz.) cans hominy
1 c. grated Cheddar cheese
1 c. milk

Heat butter and stir in flour until smooth. Stir in onions, salt, and chili powder. Slowly stir in milk. Wash hominy in colander and drain well. Stir into sauce. Pour mixture into greased 1 1/2 quart casserole. Sprinkle with cheese. Bake at 350 degrees for 30 minutes. 6 to 8 servings.
