ORANGE BREAD | |
4-5 orange rinds, pulp removed 3/4 c. water 1 1/2 c. sugar Cut rinds of oranges in 6ths and make sure all pulp is removed. Cover with cold water and bring to a boil. Drain and cover with water again and boil for 10 minutes. Drain again and let cool. Grind the cooled orange rinds and add 3/4 cup water and the sugar. Cook together until of jam consistency, about 30 minutes. Pour into bowl to cool. Makes about 2 cups. 3 tbsp. butter 1 c. sugar 3 eggs, beaten 4 c. sifted flour 4 tsp. baking powder 3/4 c. milk 1 tsp. salt Add the jam and pour into 2 buttered and floured large bread pans or 4 small bread pans. Bake in 300 degree oven about 1 hour or until done. If the bread hasn't browned enough in that time, turn up the heat and cook a little longer, watching carefully. |
