FLORIDA WHITE FRUIT CAKE 
1 cup (2 sticks) butter
1 cup sugar
5 eggs
1 tbsp. vanilla
1 tbsp. lemon extract
1 3/4 cups all-purpose flour
1/2 tsp. baking powder
1 lb. candied cherries (red and green)
1 lb. candied pineapple
4 cups broken pecans

Cream the butter and sugar. Add the eggs, one at a time, beating after each. Add the vanilla and lemon extract. Sift together the flour and baking powder. Combine the cherries, pineapple and pecans. Put flour mixture over this. Mix and place in cold oven. Set oven to 250°F and bake for 2 1/2 hours.
