WHITE COCONUT FRUIT CAKE | |
1 lb. mixed candied fruit 1/2 lb. whole candied cherries 1/2 lb. candied pineapple cubes 1/2 c. white raisins 2 c. pecan halves 1 c. shortening 2 c. sugar 1/2 tsp. almond flavoring 1/2 tsp. vanilla 6 eggs 3 c. sifted flour 1/2 tsp. salt 2 tsp. baking powder 1/2 tsp. nutmeg 1/2 c. pineapple juice 1 c. shredded chopped coconut Measure and stir together lightly candied fruits, raisins, pecans and shredded coconut. Cream together shortening, sugar and flavorings. Beat in eggs, one at a time. Sift dry ingredients add alternately with pineapple juice, and fruit to creamed mixture. Mix well. Line 2 greased loaf pans 9 x 5 x 3 inch or 1 tube pan with heavy brown paper or waxed paper. Grease paper and pour batter equally in loaf pans or all into tube pan and bake at 275 degrees about 2 1/2 hours. Allow to cool slightly in pan before removing paper. Remove paper carefully or you will peel off some of the cake. EXCELLENT!! Even if you don't like fruit cake try this one, it is different and SUPER! |
