HEALTHY BRAN MUFFINS 
1 (15 oz.) box Raisin Bran cereal
6 oz. apple juice concentrate
3 c. unbleached or whole wheat flour
2 c. all-purpose flour
5 tsp. baking soda
No salt
1 tbsp. cinnamon
1 tbsp. ginger
1 tbsp. nutmeg
1/2 tsp. allspice
1/2 c. Puritan oil or Canola
5 egg whites & 2 egg yolks, beaten
1 qt. lowfat or skim buttermilk

Extras: Pineapple Grated carrots Blueberries Nuts Raisins Pears Etc.

Mix dry ingredients in a very large bowl. Add eggs, milk and oil. Blend. Add one of the extra ingredients. Fill muffin cups 3/4 full (ice cream scoop works well). Bake at 400 degrees for 20 minutes.

Store extra batter in covered container in refrigerator for up to 6 weeks. The mix freezes well also. Makes 4 dozen muffins.
