ZUCCHINI CASSEROLE 
1 can cream of chicken soup
1 c. sour cream
1 pkg. Stove Top stuffing (chicken)
1/2 c. (1 stick butter), melted
1/4 c. onion, chopped
zucchini, sliced
carrots, shredded

Sauté zucchini with onion 5 minutes. Combine sour cream and soup, fold in the vegetables. Combine stuffing, season packet with melted butter. Take 1/2 stuffing and pat on bottom of pan. Spoon the soup and vegetable mixture over; sprinkle remaining stuffing. Bake at 350°F for 30 minutes.
