MIXED VEGETABLE CASSEROLE 
1 (16 oz.) bag frozen broccoli, cauliflower, carrot combination
1 (10 3/4 oz.) can cream of mushroom soup
1 (4 oz.) c. shredded Swiss cheese
1/3 c. sour cream
1/4 tsp. pepper
1 (4 oz.) jar diced pimiento, drained (opt.)
1 can French fried onions

Thaw and drain vegetables. Combine all ingredients except 1/2 cup cheese and 1/2 can onions. Pour into shallow 1 quart casserole dish. Bake, covered at 350 degrees for 30 minutes or until vegetables are done. Top with remaining cheese and onions. Bake, uncovered 5 minutes or until golden. Serves 6.
