TOMATO GRAVY 
1/4 c. cooking oil
1/2 c. all-purpose flour
2 lbs. round steak
1 med. onion, chopped
1 (15 oz.) can tomato sauce
1 (10 oz.) can tomatoes and green chilies
6 c. water

Cut round steak into cubes and brown in a small amount of shortening. Add onions and smother down. Add tomato sauce and tomatoes and green chilies and water.

In a separate pot, over medium heat, brown flour and cooking oil to a golden roux. Add roux to tomato sauce and continue cooking over medium heat for about an hour. Serve over rice. 8 to 10 servings.
