CHICKEN A LA ROMANO 
1 chicken, cut up
1 tsp. salt
1/2 tsp. pepper
Pinch of red pepper (cayenne)
1 clove garlic, chopped
1/3 c. chopped parsley
1 tsp. oregano
1 lg. can tomatoes, mushed up
1/4 c. grated Romano cheese
1/4 c. olive oil

Put chicken in pan and place in 350 degree oven for 15 to 20 minutes until water of chicken is absorbed. Sprinkle chicken with salt and pepper and red pepper. Mix garlic, parsley, and oregano together and sprinkle over chicken. Cover with tomatoes. Sprinkle with grated cheese and then drizzle oil over top. Return to oven nd bake uncovered 1 to 1 1/2 hours or until tender.
