CHICKEN ALLA ROMANO 
1 whole chicken breast, split, boned & skinned
1 (1 oz.) slice Swiss or mozzarella cheese, halved
1 thin slice smoked ham, halved
3 tbsp. fine dry bread crumbs
1 tbsp. grated Parmesan cheese
1 tsp. paprika
1/8 tsp. garlic salt
Pinch dried whole tarragon
2 tbsp. butter

Or I use the Holly Farms chicken fillets.

Place each chicken breast on a sheet of waxed paper; flatten to 1/2" thickness, using meat mallet or rolling pin. Place a piece of cheese and ham in center of each piece of chicken. Roll up lengthwise, and secure with a wooden pick. Combine next five ingredients, stirring well. Place butter in a 1 cup glass measure; microwave at HIGH 40 seconds or until melted. Dip each chicken breast half in butter; roll each piece in crumb mixture. Place rolls, seam side down in a 1 quart shallow casserole. Cover with waxed paper and microwave at HIGH for 4 minutes or until chicken is fork tender, rotating dish after 2 minutes or bake in conventional oven at 300 to 325 degrees for 45 to 60 minutes. Yield: 2 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
