CHICKEN A LA ROMANO 
2 med. sized fryers (cut into serving pieces)
2 tsp. salt
1 tsp. pepper
Pinch of red pepper
2 cloves garlic, finely chopped
2/3 c. parsley, chopped
2 tsp. oregano
2 cans (1 lb. 4 oz.) tomatoes
1/2 c. grated cheese (Romano)
1/2 c. olive oil

Put chicken in shallow pan and bake 15-20 minutes at 350 degrees until water of chicken is absorbed. Remove from oven and sprinkle with salt and peppers. Mix garlic, parsley and oregano together and sprinkle over chicken. Cover with tomatoes, sprinkle cheese, then olive oil. Bake 1-1 1/2 hours at 350 degrees. Serves 8.
