ITALIAN CHICKEN 
4 pieces chicken breasts, skinned
1/3 c. Italian salad dressing
2/3 c. uncooked or instant rice
1 (16 oz.) pkg. frozen broccoli, carrots & cauliflower
1 sm. can French fried onion rings
1 3/4 c. chicken broth
1/2 tsp. Italian seasoning (opt.)

Place chicken in baking dish. Pour dressing over chicken and bake, uncovered at 400 degrees for 20 minutes. Place rice and vegetables under and around chicken. Pour on broth and add 1/2 can onion rings. Bake, uncovered 25 minutes. Top with rest of onion rings.
