THREE BASIC CAKE RECIPES 
EGGLESS CAKE:

1 1/2 cups sugar
1/2 cup butter or shortening
2 cups milk
1 teaspoon vanilla or 1 tablespoon rum
3 1/2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt

ONE-EGG CAKE:

1 1/2 cups sugar
1/2 cup butter or shortening
1 cup milk
1 egg
3 1/4 cups flour
3 teaspoons baking powder
pinch of salt
1 teaspoon vanilla

ONE-TWO-THREE-FOUR CAKE:

1 cup butter
1 cup milk
2 cups sugar
2 teaspoons baking powder
3 cups flour
4 eggs

For any of the three cakes, combine all ingredients and bake in a well buttered pan in a preheated 350°F degree oven until cake tests done, about 30-35 minutes.

Use these simple, basic cake recipes as the foundation of many weeknight desserts, sliced into layered puddings or topped with fruits and ice cream.

I made the middle cake. I think it turned out very well. Not what I was expecting, but I was pleasantly surprised. My son loved it. He said it reminded him of Jiffy corn bread (it did, a little) and asked if I could make that instead of corn bread from now on! We'll see...but I will be making it again.

Made the middle cake yesterday, delicious! Not too sweet but added Penzeys cake spice to it. Reminded me of an old fashioned cake my grandmother made. The frosting was also delicious, though I added more powdered sugar than called for.

AWESOME CAKE!! My family liked the cake more than the great toppings I did for it. (1 1/2 cup powdered sugar, 1 tub whipped cream, 2 pkgs of cream cheese, cover top of each layer only, then drizzle canned pie fillings. I used blue berry) The cake is rich and an interesting texture. Sort of thick and vaporous.
