THREE EGG ANGEL CAKE 
1 c. sugar
1 1/3 c. flour
1/2 tsp. cream of tartar
3 level tsp. baking powder
1/3 tsp. salt
2/3 c. scalded milk
1/2 tsp. vanilla extract
Whites of 3 eggs

Mix first five ingredients until very smooth. Add flavoring and egg whites, beaten light, and stir until thick. Do not bake too fast. When cake tests done, invert, let hang until cold. Bake 350 degrees, 35-45 minutes.
