PICKLED BEETS 
2 c. sugar
2 c. water
2 c. vinegar
1 tsp. ground cloves
1 tsp. allspice
1 sliced lemon
1 tbsp. cinnamon
3 lbs. small beets

Cook young beets until tender, dip in cold water and peel skin off. Make a syrup with the rest of the ingredients and pour over beets; simmer for 15 minutes. Pack into jars and seal.
