CHILE CHEESE MEATLOAF 
1 can (8 oz.) tomato sauce
1/2 c. catsup
1 lb. ground lean beef
2 eggs
1 c. fresh bread crumbs
1 can (7 oz.) Ortega whole green chilies
1 pkg. (8 oz.) Jack cheese

In a small bowl mix together tomato sauce and catsup. In a large bowl combine beef, eggs, crumbs and 1/2 cup tomato mixture. Stuff 4 whole green chiles with 1/2 of the cheese cut into strips. Grate remaining cheese and cut remaining chiles into strips.

In a well greased 5 x 10 x 3 inch loaf pan, pour 1/2 tomato mixture to cover bottom. Spread 1/2 meat mixture over this. Lay 4 stuffed chiles in pairs on meat mixture. Cover with remaining meat. Pour remaining tomato sauce over top and garnish with grated cheese and chile strips. Bake in preheated oven (350 degrees) for 1 hour. Remove from oven and allow to set 5 minutes before serving. Serves 4-6.
