KAY'S SWEET AND SPICY PECANS 
1 egg white
1 tbsp. water
3 c. pecans
1/4 c. sugar
2 tsp. cumin (ground)
1 tsp. coriander (ground)
2 tsp. salt
1 1/2 tsp. ground red pepper

Preheat oven to 275°F. Line a sided baking sheet with parchment paper.

Whisk together egg white and water until foamy. Add pecans and mix to coat. Put nuts in colander and drain excess fluid. Combine the dry ingredients. Put dry ingredients in paper sack or Ziploc bag. Put nuts in and shake until coated. Spread on baking sheet in a single layer.

Bake at 275°F for 30 minutes. Stir.

Bake at 200°F for 30 minutes or until dry.
