REUBEN PATTY MELT 
7 oz. ground turkey
4 slices reduced calorie rye bread (40 calories per slice)
1 tbsp. plus 1 tsp. reduced calorie Thousand Island dressing (30 calories per tablespoon)
1/2 c. rinsed drained sauerkraut
2 slices Swiss cheese (1/2 oz. each)
2 tsp. butter, divided

Shape turkey into 2 equal patties. Spray 10 inch nonstick skillet with nonstick cooking spray and heat; add patties to skillet and cook over medium heat, turning once, until patties are browned and cooked through, 3 to 4 minutes on each side.

Set each patty on 1 bread slice; top each with 2 teaspoons dressing, 1/4 cup sauerkraut, 1 cheese slice, and then a remaining bread slice.

Wipe skillet clean add 1 teaspoon butter and melt. Add sandwiches, cover, and cook until bottom is lightly browned, 2 to 3 minutes. Add remaining teaspoon butter and turn sandwiches over; cover and cook until bottom is lightly browned. 2 to 3 minutes longer.
