ZITI CASSEROLE 
2 lbs. Ricotta cheese
1/3 c. grated Parmesan
2 eggs
1 tsp. salt
1 (8 oz.) pkg. shredded Mozzarella
1 tbsp. chopped parsley
1/4 tsp. pepper

Beat above until well blended.

1 lb. ziti macaroni, cooked & drained
32 oz. jar spaghetti sauce with mushrooms

Spoon a little sauce into 5 quart casserole. Layer 1/3 of ziti, 1/3 cheese mixture and 1/3 sauce. Repeat twice. Bake uncovered until bubbly in the center at 350 degrees for 40 to 45 minutes. Very good served with meatballs or Italian sausage.
