CHEWY PEANUT BUTTER COOKIES
1 cup (2 sticks) butter, softened 1 cup peanut butter 1 cup sugar 1 cup brown sugar, packed 2 eggs 2 cups all-purpose flour 1 tsp. baking soda 6 oz. chocolate or butterscotch chips (optional) 1/2 tsp. vanilla Combine butter, peanut butter, sugars and eggs. Stir in baking soda and flour and remaining ingredients. Mix well and drop by the teaspoonful onto a cookie sheet, leaving 1-inch space between cookies. Bake in a preheated 325°F oven for 10 minutes or just until set (depends upon size of cookies). Remove to wire rack to cool. Store in refrigerator for best taste. Makes about 50 cookies. This recipe was perfect! They tasted so good and were soft, which I love! They were the perfect size for my two toddlers who loved them and kept asking for more! I did substitute Splenda/Sugar and they still turned out wonderful. Nice job :)

Loved it!! I always tinker with recipies a bit so I added 1/2 cup nutella in place of 1/2 cup of the penut butter, and I also used cake & pastry flour. Great texture, my Mom thought they were awsome!
