CINNAMON CUCUMBER RINGS
(PICKLES)
 
Peel, core, and cut cucumbers (large) into rings. Let stand 24 hours, then drain and wash thoroughly. Then soak 3 hours in clear water.

2 gals. cucumber rings
2 c. pickling lime
8 1/2 qts. water

1 c. white vinegar
1 sm. bottle red coloring
1 tbsp. alum
Enough water to cover cucumbers.

Simmer 2 hours and drain.

2 c. white vinegar (6)
2 c. c. water (4)
10 c. sugar (20)
8 sticks cinnamon
1 lg. pkg. of red hots

Heat until red hots are dissolved. Then pour over cucumbers and let stand overnight. Drain and reheat for 3 days and on the third day leave cucumbers in syrup and bring to a boil. Pack in jars and seal.
