FANTASTIC BROCCOLI SALAD 
1 lb. broccoli
2 green onions, chopped
1 hard boiled egg, chopped
1/2 lb. bacon, crisp and crumbled
1/2 lb. Jack cheese, grated
10 cherry tomatoes, cut in half

Steam broccoli just until tender. Then refrigerate. Toss the rest of ingredients with dressing and serve. Serves 2 to 4.

DRESSING:

1/2 c. oil
1/4 c. red wine vinegar
Salt and pepper to taste
Juice of 1/2 lemon
Dijon mustard to taste
1 clove garlic, pressed
Grated Parmesan cheese to taste

Optional: Can add to salad of the following boiled chopped chicken breast, shrimp or tuna.
