APPLE - NUT MUFFINS 
1 egg
2/3 c. apple juice
1/2 c. vegetable oil
1 tsp. vanilla extract
2 c. all-purpose flour
1/4 c. sugar
1/4 c. firmly packed brown sugar
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. chopped walnuts
1 apple, chopped
1/2 c. sugar & cinnamon mixture

Grease 12 medium muffin cups or line with paper baking cups.

In bowl, beat egg with juice, oil and vanilla. Stir in flour, sugar, and brown sugar, baking powder and salt just until flour is moistened (batter will be lumpy). Stir in walnuts and apple.

Fill muffin cups, sprinkle with sugar and cinnamon mixture. Bake at 400 degrees for about 20 minutes, or until golden brown. Immediately remove from pan. Makes 12 muffins.
