LASAGNA (ITALIAN) 
1 lb. Italian sausage
1 chopped onion
2 chopped garlic cloves
1 med. chopped carrot
1 to 2 stalks chopped celery
1 (8 oz.) can tomato paste
1 lb. can stewed tomatoes
8 wide lasagna
32 oz. cottage cheese
8 oz. Mozzarella cheese
2 eggs
1/2 tsp. basil
1/2 tsp. oregano
1 tsp. dried parsley
2 tsp. pepper
1 lg. dash of love

In large frying pan, cook broken up sausage, onion, garlic, carrot and celery. Cook until sausage no longer pink. Add paste, stewed tomatoes, basil, oregano and parsley. Simmer uncovered for 30 minutes. Stir occasionally. Cook lasagna. Mix cottage cheese, parsley, eggs, and pepper together. Slice mozzarella cheese 1/4 inch thick. Layer lasagna, cottage cheese, Mozzarella and sauce. Repeat. Bake 45 minutes at 350 degrees.
