HUMMING BIRD CAKE 
2 c. flour
1/2 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
3 eggs, well beaten
1 1/2 c. oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple
1 c. chopped walnuts, or more if desired
2 c. mashed bananas

Combine dry ingredients in large bowl. Add eggs and oil, stir until moistened (do not beat). Add vanilla, nuts and drained pineapple. Bake in angel food pan 1 hour and 10 minutes at 350 degrees.

FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 c. butter
1 tsp. vanilla
1 lb. powdered sugar

This recipe is excellent! It reminds you of a top notch restaurant dessert. I substitue a 1/2 cup of coconut cream for 1/2 of the oil. Really adds to the flavor. I also add chopped pecans to the surface of the cake once it is frosted.
