HUMMING BIRD CAKE 
3 c. all purpose flour
2 c.. sugar
1 tsp salt
1 tsp. cinnamon
1 tsp. baking soda
1 can 8 oz. crushed pineapple (don't drain)
1 c. chopped pecan or walnut
3 eggs
1 tsp. vanilla extract
2 c. chopped ripe bananas

Mix flour (sifted if desired), sugar, baking soda, salt and cinnamon. Stir in nuts, beat eggs slightly, combine with oil extract bananas and undrained pineapple. Add to dry ingredients; mix thoroughly, but do not beat. Spoon into well oiled 10 inch tube pan. Bake at 325 degrees for 1 hour and 25 minutes. Remove from the oven, let stand 10 to 15 minutes. Remove from pan and cool thoroughly before frosting.

8 oz. cream cheese (don't use soft kind)
1 lb. box powder sugar
1 stick butter
1 tsp. vanilla extract

Mix with electric mixer.
