SOYBEAN CROQUETTES 
2 c. soybean paste (see recipe)
2 tbsp. flour
1 tbsp. butter
1 egg
Bread crumbs or cracker crumbs
2 tbsp. milk
Sm. amount minced onion
Tomato
Garlic seasoning or juice and parsley
Salt and pepper to taste

Brown the seasonings in small amount of oil. Add the other ingredients. Allow to cool; form egg shaped croquettes. Roll them in beaten egg with a little milk and then in fine bread crumbs (this egg for dipping the croquettes, is not included in the recipe). Fry them in deep fat or oil medium heat, until browned and cooked inside. Place on paper towel to absorb fat. Serve hot or cold.

Note: These recipes are from Uruguay used during a meat shortage. They are great for use in a Bible School or anyplace where meat is expensive and funds are short.
