SPANISH BARLEY 
3/4 c. pearled barley
5 c. water
1/2 stick butter (or 3 slices bacon, cut in pieces if not Lent)
2 sm. onions, diced
1 sm. green pepper, chopped
2 c. tomatoes
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika

Wash barley. Add water and boil about 1 hour or until done. Drain. Brown bacon (if not Lent) or melt butter and add onion, pepper and seasonings. When onions are tender, add tomatoes and cook 10 minutes. Add to drained barley and cook until well blended, or about 15 minutes.
