GOLDEN POTATO CASSEROLE 
6 med. potatoes
1/4 c. butter
2 c. cheese, shredded
2 c. sour cream (reg. or low fat)
1/3 c. green onion, chopped
1 tsp. salt (or less)
1/4 tsp. pepper
2 tbsp. butter

Cook potatoes, peel and grate. In medium saucepan, melt a fourth cup of butter, add cheese and stir until almost melted. Remove from heat and blend in sour cream, onions, salt and pepper. Pour over potatoes; stir lightly to blend and pour into casserole. Dot with remaining butter. Bake at 350 degrees for 45 minutes. Serves 6.
